Great Value Pepper & Onion Mixed Vegetable Blend, 20 oz (Frozen)

I was struggling to keep freshly diced red, yellow, orange, and green bell peppers and onions in my freezer to use as a head start for meals when things got hectic. Then I found this product, and I hesitated because it's missing the yellow and orange, but the colors still popped, so I gave it a try. They're not evenly diced. There seem to be more onions than peppers, and overall it does not look as colorful as homemade. The true testing came at mealtimes when we felt we'd pass out from hunger on a hectic day. They were right there in the freezer, ready to use in a flash. It cut the prep time immensely, as there were no peppers to wash, no seeds to remove, no sharp knife to deal with, and absolutely no tears from the onions. We now use these in stir fried dishes, tacos, soups, scrambled eggs, rice, etc. One day we made fajitas with these, stir fried with fajita seasoning and ready to eat rotisserie chicken from the deli, warmed up tortillas, added some potato salad also from the deli, and had a feast! Honestly I don't think anyone was looking to see how evenly they were diced, or the colors, they were just too busy eating! I'm sold on this shortcut in the kitchen, and this is a new staple in our freezer. Since they're frozen, I would not use them in salads. But stir fry them before tossing them into a casserole for added flavors and color. One day I made homemade personal sized pizzas, and added these along with sliced mushrooms to everything else that makes a pizza. They were perfect in flavor, and again nobody was checking for perfectly cut peppers or onions. I highly recommend this if you like the flavors of peppers and onions in your food!
