Time constraints sometimes force me into making a box cake and I always add a little extra baking powder to it which causes alot moisture cake. My homemade biscuits rise up and are big and beautiful. All about baking powder

It's good to know what double acting means. Single acting reacts and releases carbon dioxide as soon as it is mixed with moisture. Double acting releases some carbon dioxide when mixed with moisture and more when heated. The double acting works better than single since while you're mixing the batter, the single acting power is doing its work and it's done by the time you bake it. Double acting will give you a lighter cake, coookie, whatever, since the powder will generate little bubbles during backing.
