If you like to bake, then you'll be aware of the cheap versus expensive flour debate. I've been baking for close on 40 years now and what I've realized is when you buy quality flour you are more assured that the final baked product will turn out right. Like everybody else I have economized and have used cheaper flours at times, but I have observed that the final baked product can be hit or miss as to whether it turns out as expected. Whether that's to do with protein content in the (cheaper) flour, or some other metric, I can't say. To justify the cost of King Arthur I divide it by how many baked goods I'm going to make from that bag of flour - that validated the extra expense for the better quality of King Arthur.
