If you're just starting, a kit that keeps things simple can make learning more enjoyable.

• Core tools: Look for proofing baskets (round or oval), fabric liners, a dough whisk, scrapers, a baking mat, and a clear-labeled sourdough jar.
• Bakeware: Options like a loaf pan, perforated baguette tray, or a Dutch oven–friendly setup add flexibility.
• Materials & care: Natural rattan baskets offer airflow; silicone and nonstick items can be easier to clean. Check care instructions on each product page.
• Size & storage: Confirm basket and pan dimensions match your oven and storage space.
• Shopping tips: Use filters by material or set size, read reviews, and check Pickup or Delivery availability to fit your schedule.

Proofing baskets (often cane or rattan) support dough while it rises, helping shape and surface texture.

• Shape & Support: Round or oval baskets help dough hold form, which can improve oven spring.
• Airflow: Woven baskets allow air to circulate, which may help the surface dry slightly for a more defined crust pattern.
• Liners: Fabric liners can create a smoother exterior and may help reduce sticking.
• Size: Common baskets are around 9–10 inches; choose a size that fits your typical dough weight.
• Usage note: Baskets are for rising, not baking. Lightly flouring the liner or basket can reduce sticking, but techniques vary by dough.

Rattan baskets benefit from gentle, dry cleaning to maintain their structure.

1. Air dry first: Let the basket fully dry after use so any stuck flour firms up.
2. Brush out: Use a dry brush or cloth to remove flour and crumbs. Avoid soaking, which can weaken fibers.
3. Liners: If your kit includes fabric liners, follow the care info on the product page; hand washing and thorough drying are common approaches.
4. Deep dry: Some bakers periodically dry baskets in a warm, turned-off oven to discourage moisture; use low residual heat and monitor closely.
5. Storage: Store baskets in a cool, dry place to help prevent odor or mildew. Care needs vary with humidity and use.

Both can work well—each material brings different baking perks.

• Metal (often perforated): The holes allow airflow under the dough, which can help encourage a crisper crust. Many have 2–3 grooves to hold shaped loaves.
• Silicone: Flexible for easy release and simple storage. It may produce a slightly softer crust compared with perforated metal.
• Handling: Silicone pans can benefit from a sheet pan underneath for stability. Metal pans may be preheated depending on your recipe.
• Care: Silicone is generally easy to wash; nonstick metal usually prefers nonabrasive tools.
• Choice tip: Consider your crust preference, oven routines, and cleanup style to decide which fits your baking.

For a typical home loaf, many bakers use a mid-size pot.

• Capacity: Around 4–5 quarts often suits common dough weights without crowding.
• Shape: Round works well for boules; oval can fit longer loaves.
• Dimensions: An interior diameter near 8–9 inches and good depth allows room for oven spring.
• Features: A well-fitting lid helps trap steam; check overall weight, handles, and oven-safe ratings on the product page.
• Practical tip: Parchment or a heat-safe sling can make transferring dough easier.
