Easy Chicken Skillet Dinner

These are a go-to when I forget to thaw meat for dinner. I'm a lazy cook. So I just start the thaw by browning in a skillet. Set them aside. Throw some chopped up potatoes, carrots, and onion in the skillet. Sprinkle flour, salt, pepper over them and top with the chicken thighs. Add a little broth or even water, put a lid on it and let it cook on medium-low heat. It makes its own gravy from the flour and liquid. You might even put some Pillsbury frozen biscuits in the oven.

I try to buy organic chicken as much as possible, but with today's food prices, I occasionally purchase these instead because they are less expensive. Honestly, you wouldn't know they aren't organic from the taste. They are fresh, flavorful and just as enjoyable as the organic chicken I typically buy.
