Greek sheet pan dinner!

I'm obsessed! I use this to make a Greek chicken sheet pan dinner-super easy recipe (sorry, I don't measure so everything is approximate) For my family of three: - 3 boneless chicken breast or thighs cut up into 1.5-2” pieces -approx 30ml fresh or bottle lemon juice -approx 60ml EVOO -sometimes I add a Tbsp of Greek yogurt (if I have it on hand) which I think tenderizes and makes the chicken juicier -generous amount of KINDER'S THE GREEK BLEND (maybe 2-3 Tbsp) Mix above ingredients and let marinate in the fridge for at least an hour, up to 8 hrs depending on your preference and available time (longer gives more flavor) Line a sheet pan with parchment paper or foil and spread marinated chicken evenly. Add what you have-it's ok to get creative here! Our favorites are Broccoli florets, sliced onion, cherry tomatoes (whole-don't need to cut in half), bell peppers and halved red baby potatoes. -spread it all out evenly and drizzle with some olive oil, season with KINDER'S THE GREEK BLEND, and a splash of lemon juice. Bake in the oven at 350 degrees for approximately 35 minutes or until your chicken is fully cooked and veggies are your desired tenderness. I prefer to top it with crumbled feta cheese before serving! (Because….Yum)
