  • One ingredient, nothing else: Milk from Gir cows, and nothing else. No vegetable fat, no flavoring, no color, no preservatives. Golden, grainy and nutty, the way desi ghee should be.
  • Made the bilona way: The milk is set into cultured curd overnight, the curd is churned into white butter, and the butter is simmered slowly until the water leaves and the milk solids turn brown and settle. About 25 to 30 liters of milk go into one liter of ghee, which is why it tastes the way it does.
  • Built for heat: Clarified butter with the milk solids taken out, so it takes high heat for searing steak and vegetables, roasting, frying eggs and popping popcorn, around 450 F, without smoking or burning the way butter does.
  • The everyday jar: A spoon in morning coffee. Rice, dal, roti and khichdi the Indian way. Sauteed greens, mashed and roasted potatoes, pie crust and cookies in place of butter, and Middle Eastern sweets such as kunafa and ma'amoul.
  • Glass jar, sealed in India: Made in small batches and packed in a glass jar. No refrigeration needed; keep it closed, dry and away from sunlight and use a dry spoon. Best before 12 months from packing.
