Key item features

  • One ingredient, nothing else: Sugarcane syrup, crystallized slowly on cotton thread. No bleach, no sulfur, no whitener, no anti caking agent, no polishing. The thread running through each crystal is the proof that it grew rather than being molded.
  • Grown, not molded: The syrup is poured into pots with cotton threads stretched through them and left for 8 to 10 days while the crystals grow along the thread. Then the pots are broken open and the mishri is sorted by hand.
  • What you will notice: Pale, irregular crystals with a thread through the center, a clean, mild sweetness with none of the sharp edge of refined sugar, and a slow, cooling melt on the tongue.
  • How it is used: A crystal in tea, chai or coffee in place of sugar, the way rock sugar is taken across India, Iran and China. A few crystals in glossy braises and sweet soups. Crushed into rice pudding and desserts. A pinch with fennel seeds after a meal.
  • Packed in India: Sorted and packed by hand in a resealable food grade pouch. Store cool, dry and closed. Best before 12 months from packing.
