Ingredients

Key item features

  • One ingredient, nothing else: Sugarcane juice, boiled down. No sulfur to lighten it, no soda, no bleaching agent, no clarifier, no added color. Because it is never refined, the cane molasses stays in, with the dark color and deep caramel flavor that white sugar has had stripped out of it.
  • Made the old way: Cane is cut, crushed and juiced the same day, then the juice is boiled down slowly in open iron pans until it thickens and ropes off the ladle, and poured warm into the tub to set. That is the whole recipe. The same family as piloncillo, panela and rapadura.
  • What it tastes like: Rounder and far less flat than sugar, with caramel, a little smoke from the open pan and a mineral edge at the finish. Break a piece off with your thumb and it crumbles rather than shattering like glass.
  • How to use it: Cafe de olla and champurrado. Aguapanela and chai. Grated into cookies, banana bread, granola and barbecue sauce in place of brown sugar, one to one by weight. Marinades and glazes for grilling. Capirotada, halwa and kheer.
  • Why every tub looks a little different: It is poured hot by hand and left to cool, so the color ranges from honey to dark brown with the batch and the season of the cane. 2.2 lb (1 kg) food grade tub with a snap on lid. Store cool, dry and closed. Best before 6 months from packing.
