Potassium bicarbonate is commonly used in winemaking to help balance acidity. It is used for deacidification of grape juice, improving flavor, and rounding out the profile of the wine. A typical usage is about 3.4 grams per gallon, which can reduce acidity by 0.1%. For optimal results, it is best not to reduce acidity by more than 0.3-0.4%.
