I've been really impressed with this egg white powder. As a vegan, I use it to make plant-based scramble, omelettes, and even crepes. After some trial and error I found the perfect preparation that gives a delicate, realistic texture for scrambles and omelettes. The instructions worked as a starting point, but I had the best results by adjusting the ratio. For every 4 tablespoons of egg white powder, I use 6 ounces of warm water, 4 tablespoons of unsweetened soy milk, and 1/2 teaspoon of baking powder. Whisk everything together until smooth, then let the mixture rest for about 5-10 minutes before cooking. That resting time made a noticeable difference in the final texture. The result is much lighter and more tender than when I followed the original proportions. It cooks evenly, has a pleasant texture, and works beautifully in recipes where you want the consistency of cooked egg whites. If you're finding the texture a little firmer than you'd like, I'd definitely recommend experimenting with a bit more liquid and allowing the batter to rest before cooking. Those two small adjustments completely transformed the product for me. I'll be purchasing this product on repeat!

I used this in a jelly roll sponge cake and it whipped up perfectly like conventional egg whites and held stiff peaks. I have not tried it on its own as scrambled egg whites and will use it more for baking but I was very impressed by its texture and performance. Would recommend!
