My girlfriend and I have diabetes, I wanted to make gravy without flour and I researched this. It can clump easily so most people use oil to make a paste. I use country crock. I love using this to make gravy! Also, I do cook it longer than regular gravy, but it is worth it. Just don't use too much like a teaspoon or 2.

Homemade Ice Cream

I started buying xanthan gum this year to make ice cream. Love this little tub! First of all, it's just xanthan gum, no fillers. Secondly, great price at less than $1/oz (which calculates to less than 25¢ per cup of ice cream). Works really well for thickening foods. Last, I appreciate it being in a rigid container because it's much easier to store and stack.
