I've been using this olive oil for years. When I switched from Canola oil to this, I didn't notice any flavor change. And it cooks exactly the same. I've made vinegar and oil dressings and also had it taste completely normal. Nothing to get used to at all. And a 32 oz. bottle lasts me quite awhile, as a single person, cooking only for myself. I've never had a bottle go rancid. But the bottle does warn not to refrigerate it for a reason. It sets up and gets weird. That's the way of olive oil :) So if you make something like dressing, be sure to get it used up right away. Only make enough for maybe a week, if you eat many salads or veggies with vinegar and oil dressing :)
