The flavor is good without being overly salty or smoky. One big reason I chose this one is the preservative situation. I'd rather have a guaranteed, regulated amount of nitrates listed clearly than the uncured “celery powder” swap that's basically doing the same thing but feels less straightforward. That just makes more sense to me. It's simple, consistent, and works every time. If you're going to eat bacon, this is a good choice, just don't cook too hot.
