Accuracy depends on design and how you use it.

• Digital leave-in probe thermometers with calibration modes tend to read very precisely at a specific spot. Place the probe tip where you want the reading and keep the base or receiver outside the oven.
• Analog dial oven thermometers are built to sit inside the cavity and show ambient temperature. They’re simple, durable, and helpful for spotting swings while preheating.
• Infrared thermometers measure surface temperature (stones, pans, walls), not the air.

For any style, look for features that can support accuracy: a clearly labeled oven-safe rating, a wide temperature range (often up to about 600°F), the ability to calibrate, and an easy-to-read display. Placing the sensor correctly and allowing adequate preheat time can also improve results.

For a consistent reading, try this placement:

1. Center of the oven: Set the thermometer on or hang it from the middle rack, near the center, away from walls, the door, and heating elements.
2. Same level as your food: If you’re baking on the upper rack, position the thermometer there to check the temperature your recipe experiences.
3. Check hot spots: For uneven ovens, take sequential readings on the left, right, and back to understand variations.

Preheat fully, then wait a few extra minutes for the thermometer to stabilize before reading. Use oven mitts when moving it, and keep the face visible through the door window so you avoid opening the oven more than necessary.

A simple oven thermometer makes checking straightforward.

1. Place it correctly: Put an oven-safe thermometer on the middle rack, centered and not touching walls or elements.
2. Preheat and stabilize: Let the oven preheat, then wait an additional 10–15 minutes so both the oven and thermometer settle.
3. Compare and adjust: Note the reading versus the set temperature. If there’s a consistent offset, you can factor that into future baking or consult your appliance manual for calibration options.

Infrared thermometers can complement this by checking pan or stone surfaces, but they don’t measure the oven’s air temperature.

Only thermometers labeled for oven use should be left inside during cooking.

• Leave-in probe thermometers use a metal probe and heat-resistant cable (or a wireless probe) rated for oven temperatures; the display or receiver stays outside.

Not intended to stay in the oven: most instant-read folding thermometers, many handheld digitals, and infrared thermometers. Always check the product description for an oven-safe rating and temperature range before use. When using a probe, avoid contact with heating elements and route cables carefully to prevent crimping in the door gasket.

Infrared thermometers can be very handy in oven-related cooking, with a few caveats.

• Great for surfaces: Quickly check the temperature of a pizza stone, cast-iron pan, baking steel, or oven wall to gauge preheat readiness.
• Not for air temperature: They read the surface they’re pointed at, so they won’t replace an oven thermometer for monitoring ambient heat.
• Helpful for hot spots: Scan different rack positions and surfaces to understand temperature variability.

For a fuller picture, pair an infrared thermometer for surface checks with an oven-safe thermometer inside the oven for ambient readings. Keep the lens clean and avoid steam directly on the sensor for more consistent results.
