Deglazing your sauté pan or stock pot using Lea %26 Perrins Worcestershire Sauce works beautifully in conjunction with or exclusive of a good red or white wine. It brings out the deep flavors of beef and pork used generously, and can be used more sparingly with chicken and delicate fish, as well. When I make the sauces for both fish tacos and cabbage slaws, adding a measure of Worcestershire sauce and a couple squirts of Tabasco to the yogurt/sour cream base, fresh lime juice, honey, fresh ground pepper, and cilantro (fish tacos) or fennel and poppy seeds (coleslaw), truly enriches the flavor.
