This roaster comes with an unglazed lid that needs to be soaked in water before use. During the cooking process the lid will absorded water which is released in the form of steam. The steaming meathod of cooking will ensure your food is tender as well as infused with all natural flavors. The bottom section is coated with a glass frit glaze which benfits users with a quick clean up.
