Great knife, easy to use

The Farberware Edgekeeper 5" Santoku with Self-Sharpening Sheath is a great product. I chose to review this item because I was interested in changing out all of my knives. I figured if this was a good product, I would go and buy a set after I made my review. I was not disappointed. This knife comes with a self sharpening sheath, which of course, sharpens each time you slide it in and out of the cover. To me that is an added bonus. I like my knives to have covers so that while I reach into my knife drawer, I don't get cut or stabbed.The size of this knife is perfect for me to handle. Not too big and not too small. The design on the knife is made so that foods do not stick to your knife while slicing. I always hated that when slicing cheeses or potatoes and other vegetables. This design allows air to be between the food and knife which prevent the foods from sticking and in turn allows for easy and fast slicing and chopping. This knife also has a nice wide surface to allow you to scoop up chopped ingredients. I definitely recommend this knife and plan on purchasing some as gifts for friends and family.

Sharp Knife with a Heavy Blade for Chopping

The Farberware Edgekeeper 5" Santoku with Self-Sharpening Sheath is a nice addition to any kitchen. I have several other Farberware knives and have been pleased with all of them. This a Japanese-style knife that has a straight edge and scalloped blade, perfect for slicing cleanly through meat, fish and vegetables. Scalloping along blade reduces friction and helps stop foods such as meats and cheeses from sticking to knife. The knife should be held parallel to the cutting board with blade slicing straight down through food. The stainless steel blade is quite strong and durable. My other Farberware knives are in a storage block, and I really like the Edgekeeper sheath for this Santoku knife as the built-in sharpener sharpens the blade each time it is inserted or removed from the sheath. I like slicing and chopping with this knife so much that I will probably get the 7” version also. The Santoku, Japanese for "three virtues", knife was developed in the mid-1940s near the end of World War II as a Japanese version of the western chef's knife. The knife is very useful in the slicing, dicing, and mincing of fruits, vegetables and meats with no job being too large or too small. As noted in the product description, the sheath is also a nice safety feature to protect the knife while it is stored in a drawer. That also protects the owner reaching into a drawer from accidentally cutting yourself on the blade. I would recommend this knife as a great addition to your kitchen knife collection.

Razor Sharp

The Faberware Edgekeeper 5" Santoku knife with self-sharpening sheath is a great addition to anyone's kitchen knife collection. It is packaged in one of those clear plastic formed packages. It took the use of a utility knife to remove because the packaging was very tough. Inside was the knife inside of its self-sharpening sheath and a little flyer. There wasn't much to read about the knife because it only goes together one way. If you try to put the knife in upside down, it will drag against the top of the sheath and not go in all the way. The red plastic pieces that hold the sharpening blades on the sheath are the "bottom" and you put the knife in with the blade against those. This is what gives a sharpening action each time the knife is inserted into and withdrawn from the sheath. When you try to pull the knife out of the sheath, sometimes you have to slightly angle it with the bottom away from the red plastic indicators because it will grab and not allow the knife to slide out. The sheath isn't shaped like the knife. For some reason the sheath extends beyond the end of the knife and then curves upwards. Perhaps this sheath can be used with other Farberware knives of different shapes and lengths? The sheath also has several holes along the top and bottom. I assume this it to keep air flowing around the blade and disperse moisture so that if kept for a long period of time in the sheath that no rusting happens. The end of the sheath has a slot cut out of it that follows along the entire end edge. I'm not sure what this is for, but it does allow you to see where the end of the blade is so maybe it's just to let you know the blade is fully inserted. The knife has two parts, the blade and the handle. There are no rivets or screws in the handle, it's a solid plastic covering. This will make for easy cleaning and hopefully less chance of breakage. The blade is nice and thick and just along the top of the edge has little cups which will help to allow sticky or wet foods to release from the blade without scraping them off. The knife doesn't feel overly light which I liked because that little bit of extra heft shows me the quality. I've tested it on several different foods including lettuce, apples, tomatoes and meats. It cuts them all very well. The blade has a nice sharp edge and it the perfect size for most cooking needs. I would definitely recommend this item because it's nicely made, it has its own storage sheath, and it keeps it's edge!
