If you are not familiar with Persian rice, I suggest watching a few YouTube videos. The crust formed in the bottom of this pan is very special. It's an integral part of Persian culture. It's revered by all Persisn, and producing a golden, uniform rice crust is a cause for pride and joy. The one I bought 22 years ago for $28, literally ran out of steam and I finally had to say good bye. Now, at nearly $90, you don't get anything different. I just hope the workmanship won't be any different either.
