Why two blades?
Dual blades create additional flash. This, in turn increases the intensity of the blade colors as they spin, whether the blades are the same color or contrasting colors. In addition, the sound and vibration they make is noticeably different than a spinner with a single blade. Two blades also produce more loft so they are easier to fish over weeds and other structure.

Vibrant blades.
Gold blades are polished brass. Copper blades are copper plated, while silver blades are plated with genuine silver so they produce a bright white flash that's easily seen underwater.
