Chile Negro, also known as Pasilla Negro Chile or Pasilla Chile, is one of the more flavorful Mexican chiles. It has black skin and dried fruit flavor, which is the reason it known as Pasilla or “little raisin.” These chiles are thin and long with mild heat and deep, smoky flavor that tastes of dark chocolate. It is one of the dried chiles in the “holy trinity” used to prepare authentic moles. It also adds rich smokiness to salsas, enchilada sauce, Texas chili and tortilla soup.
