Makes 4 Cups (Enough for 2 - 9 Inch Pies): 2 medium pie pumpkins; 1 pouch Mrs. Wages Pumpkin Pie Filling Mix. To make pie filling: Preheat oven to 350 degrees F. Wash, cut in half, scoop out seeds and strings of pumpkins. Place cut side down on a baking sheet, and bake in 350 degree F oven for 40 minutes. Remove rind and mash pulp with potato masher or food processor. Cool slightly. Stir in 1 pouch Pumpkin Pie Filling Spice Mix. Pack in rigid containers, leaving 1/2 inch headspace, and freeze. That before using. To Make One Pie: 2 cups spiced pumpkin mash, 3/4 cup sugar, 1 - 12 fl oz can evaporated milk, 2 large eggs. Preheat oven to 425 degrees F. Combine spiced pumpkin mash with sugar in a large mixing bowl. Beat in evaporated milk and beaten eggs. Pour mixture into 9 inch unbaked pie shell. Bake pie in 425 degree F oven for 15 minutes. Reduce heat to 350 degrees F and bake 40 minutes more. Cool completely before serving.
