Late Night Queso Indulgence!

Many eat cookies! Many eat ice cream! Many scour for a bit of Chocolate…. But I whip up a simple homemade Queso Cheese Dip with Rotel to go with my Blue Corn Tortilla Chips. My big batch quickly diminishes with my nightly ritual until the container is empty. I do my best to resist making a fresh batch right away but because it is SO SIMPLE to make with Rotel, and because I know I have another 10 cans in my pantry. My resistance is futile.

Better than chopping your own tomatoes

This is my favorite ingredient for my family's home made rotel dip. It adds a nice texture and more of an actually tomato taste than with out it. I've also heard of people using it for their salsa recipes so next time I will have to try that. They changed the sizing on the cans. They used to be a lot smaller, mini almost, but now they come in a decent sized can about the size of my hand.
