    Best vegan biscuits on the planet!

    I first heard about teff flour on Youtube, listening to my favorite vegan cooking channels. I wanted to make sweet potato biscuits (see sweet potato soul on youtube) for Easter Sunday, and on a whim decided to sub 1/2 cup of the whole wheat flour with teff flour. These were seriously the most awesome biscuits! Just a hint of sweetness, fluffy and so good out of the oven. I noticed the undertones of the teff flavor, but not overwhelming. I told my hubbie it tasted a lot like buckwheat pancakes, also a winner at our house!

    Not the same quantity. New bags are 20 oz, old bags were 24 oz. My wife relies on teff flour to make food she is not allergic to. We still plan to buy it, but it looks like some packaging machine salesman has been selling new machines and bags. Better than milk, rice milk made the same change.

    Teff flour for gluten-free dark sourdough bread

    I like BRM's teff flour because it is reliably gluten free (I like ALL their GF products for this reason; Teff is just one of them). I also like their teff because it is a *brown* teff; the only other teff I can get in town is "ivory", and I want that dark color; I make my own gluten free sourdough dark bread (instead of "white bread"), and teff is key for this because for obvious reasons I can't use whole wheat. I have perfected my GF dark sourdough bread over the last two years (below is a photo of loaf #98!). It actually uses a bunch of different BRM GF flours (teff, millet, sorghum, amaranth, quinoa, tapioca and oat). My recipe used to include brown and sweet rice flours, but recently I discovered I had an issue with rice so I modified it, with good success. I make bread about every week, week and a half. Thank you Bob's Red Mill for having all these wonderful GF flours to work with! I love having the variety.
