I am on the AIP (Autoimmune Paleo) Diet and I love these bars for a go-to when I don't have time to bake for myself. I stick them in my bag for on-the-go snacks so my blood sugar doesn't get too low while I'm out and about. They taste great, have a lovely texture, and are not too small. These are definitely soft! I don't like biting into hard bars. I love the ingredients and love that it's almond flour. They are a bit pricey but I feel a lot better eating this compared to other snack bars that I have had in the past. It doesn't spike my blood sugar or make me want to eat more.
