Wonderful pan design
It's a great style pan to salute and fry things up. The low sides make flipping easy but also keeps steaming to a minimum so your food browns better. I will say that the preseasoning is on point with other reviewers so don't buy this thinking you can fry an egg or scramble eggs out of the packaging. You need to season it and then season it through regular cooking for awhile before you go and do that. I don't buy it for eggs. I bought it for fried potatoes bc no matter how nice your three ply stainless steel pans, potatoes will stick over and over again but I didn't have that issue with this. I'll co tiniest using it for sautéing and frying to get a really good layer of seasoning on it. I will say the pan is 12” from rim to rim, giving you about 10” of space at the bottom for your cooking needs. The handle is so long! I really appreciate that since I have a gas stove and plan to se it outside for the grill and other open flames. Also, this is a thicker carbon steel. It's more cast iron heavy than carbon steel light. I'm not picking this up to shake the pan while cooking like I do my carbon steel wok. I was expecting it to be lighter but it's not too terrible. I really love it. I'm very pleased with yet another lodge purchase.
