So, now that we are back to earth on egg prices I would like to thank the chickens. I remember .79 cent a dozen eggs. I didn't know what an extra large egg was, but it says they should weigh about 2.1 oz. I weighed 3 of these and they were 2.1 to 2.3 oz. So it's all good

Fried egg one-oh-one.

I don't bake much anymore, and my meals have been trimmed back so I can stay trim. However, I do yearn for the meals and snacks we had as kids that bring back so many mouthwatering memories. One small memory I just reaquainted my self with is a basic fried egg on toast. No frills, just some canola oil in a frying pan and a decent spatula. You can easily do 'overkill' on this very basic item. Just keep it simple and enjoy the taste of a fried egg on toast, and if you want, a thin slice of cheese. Now, when I say basic fried egg, I mean exactly that: crack the egg, drop it in the hot pan, and break the yolk. Spread it around a little according to how you like it. Remember, this is a 'fried egg', not over easy or sunny side up. It's also not an omelette. Just keep it simple, and you will really savor the simplicity and taste. Peter.
