These blades are crafted of Swedish Sandvik 14C28N nitrogen enriched stainless steel, which is known for its excellent edge holding ability and superior edge retention. The blade goes through a cryogenic tempering process that further increases the hardness of this steel, making them harder than other K Sabatier knives, so the edge retention will be better. The K Sabatier 200th Anniversary series offers beautifully finished and indestructible G10 fiberglass handles, ultra fine grinds and hand finishing.
