Instructions

What You'll Need: 2 lbs. chicken breasts (cubed) - 4 bell pepper (diced) - 1 (20oz.) can pineapple chunks - 2 tbsp. olive oil and soy sauce - 1/4 cup water, 1/2 cup vinegar. DIRECTIONS: 1) In large saucepan whisk together pineapple juice, soy sauce, oil, water, vinegar, and Riega seasoning. 2) Bring to boil and stir for 3 minutes. Remove from heat and set aside. 3) Heat oil in pan on med-high, salt and pepper chicken, and sear each side for 2 min. Remove and set chicken aside. 4) Add veggies to large skillet and on medium heat. Sauté for 3-5 min. until tender. 5) Add chicken and sauce to skillet with and simmer on for 5 minutes, or until chicken is fully cooked. Serve over rice, cauloflower rice or salad for a deliciously easy lunch or dinner.
