Instructions
Cook 1 kg rice and keep aside. Heat 250 ml of refined vegetable oil and fry mustard, gramdal, cashewnut and chillies. Remove and set aside. Fry 1kg brinjal and 500 g vegetables with a pinch of turmeric in the same oil. Add 100 g of MTR vangibhath masala, tamarind juice, salt to taste and jaggery (sugarcane) if desired. Add the fried seasoning, fried copra and cooked rice. Mix well and serve hot. Measure referred in the recipe means any cup or container used as per your convenience. Serve with curd raitha or coconut chutney.
