I use this olive oil to make homemade mayonnaise. The light flavor of this oil doesn't overpower the mayo. We consider it very good for that purpose. It would probably be ok for cooking, but I wouldn't recommend it for any purpose like dipping or drizzling where you want an olive forward flavor.

It really, really, really does not taste like you've cooked with olive oil. My family hates the taste of olive oil but I hate the idea of them eating seed oils.
