for the best mac and cheese ever, i cook this radiatori pasta in just enough water to cover, with some chicken bullion and a glob of butter - simmer slowly until the pasta is almost done and the cooking water has reduced so that it appears cloudy and somewhat thickened from the starch in the pasta. then i tear off pieces from sliced American cheese - the kind that has a more matte appearance, not the shiny looking stuff because i've found that it gives the sauce an off putting texture and mouthfeel - tear the non-glossy slices of American cheese into pieces and stir them in gradually, just a few pieces at a time until you have the most beautiful, rich, orange cheese sauce that clings perfectly to this radiatori pasta

My son's favorite pasta shape is Radiatore, and it was always readily available until the Covid pandemic hit…I searched everywhere, and made sure to see if it were re-stocked every time I grocery shopped, but had no luck—Until about a year ago (or thereabouts), I was THRILLED to find this shape again, along with other favorites like Trompetti, etc.! But would it taste right…? I'm pleased to say, that ALL of the Bettergoods products we've tried have been wonderful! I'm so glad to see this pasta shape back on the shelves, but just as happy to have discovered the Bettergoods line of products! Keep it up! I now look for this brand to try in place of my regular brands, it's THAT good!
