An Anaheim chile pepper is technically a mild variety of the New Mexico chile pepper cultivar No. 9. The California produce industry's name for this New Mexican chile pod type is "Anaheim". Anaheim chiles are sold fresh and are also available roasted, dried, ground or canned. When canned, these chiles are usually labeled simply as "green chiles".

I previously gave this chili 1 star, because the company sent the wrong chili, I am not one to return anything. After making a sauce, I can say it has good flavor. It wasn't what I ordered, I ordered NEW MEXICO HATCH CHILI. This chili has zero heat to it, but does have a good flavor. The company should send me the HATCH CHILI on them. I paid $28.00 for 1 bag of dried chili. Im going into business and need a supplier for the HATCH chili, on a large scale.
