Buttermilk Biscuit Mix - Gluten Free with a Vegan Option - Makes approximately 10 Biscuits
Ingredients: Non-GMO Cornstarch, White Rice Flour, Brown Rice Flour, Tapioca Flour, Potato Starch, Xanthan Gum, Baking Powder (no aluminum), Sugar, Salt*Our mixes do not contain any wheat, gluten, egg, fish, shellfish, nut, soy or sesame ingredients.
At Home Ingredients Required and Instructions:
β’ 1/2 cup salted stick butter (can use vegan)
β’ 1 3/4 cups buttermilk plus 1/4 cups separate for the top of your biscuits (can make vegan with plant milk and 1 tablespoon apple cider vinegar) You can substitute heavy cream if you prefer.
Instructions
β’ Place butter in the freezer at least 20 minutes ahead of time
β’ Preheat oven 425*F Line a cookie sheet with parchment paper.
β’ Set aside 1 Tablespoon of your mix from the bag for dusting the parchment paper and your roller lightly.
β’ Put the rest of your ingredients from Mama Alanaβs Gluten Free Biscuit Mix into a large bowl.
β’ Grate or cut in small diced pieces the frozen butter. Mix well into ingredients with a fork.
β’ Pour 1 1/4 cup of the buttermilk in bowl and mix. If you need more add until dough comes together well.
β’ Put a large sheet of parchment on counter and lightly use the set aside flour, flour it and your roller.
β’ Put dough on parchment paper and roll or smooch down until itβs about 3/4 inches thick.
β’ Then flip it in half so itβs now doubled and cut straight down for your biscuits.
β’ Do the same with extra dough until you run out.
β’ Then place on cookie sheet and put your remaining buttermilk generously on top each biscuit. I use a silicone basting brush.
β’ Bake for 15-17 minutes until the tops are lightly golden.
