The beans were often baked in molasses, a common byproduct of the rum industry, which was significant in Boston's economy during that time. This culinary tradition led to the nickname "Beantown."

The origin of baked beans in Massachusetts can be traced back to Native American cuisine. Indigenous peoples in the region, such as the Wampanoag, cooked beans with maple syrup and bear fat in clay pots. Boston Baked Beans Recipe
Ingredients:
1/4 cup Boston Spice Boston Baked Beans spice blend
1 lb Dry navy beans
1/4 lb Diced thick bacon
1/2 cup Molasses
1/4 cup Brown sugar
1/4 cup Ketchup
1/4 cup Apple cider vinegar
2 tbls Worcestershire sauce
2 cups Water

Soak navy beans in water overnight. Drain and rinse the beans, then transfer them into a large pot.
Cover the beans with fresh water and bring to a boil. Reduce heat and simmer for about 1 hours or until the beans are tender but not mushy. Drain and set aside.
In a medium size bowl, combine the Boston Spice Boston Baked Beans spice blend, molasses, brown sugar, ketchup, apple cider vinegar, Worcestershire sauce, and water. Mix well until the spice blend is dissolved.
Preheat your oven to 300F degrees
In a large ovenproof pot or Dutch oven, cook the bacon over medium heat until crispy. Do not drain the bacon grease.
Add the cooked beans to this pot. Pour the liquid mixture over the beans and stir gently to combine.
Cover the pot with a lid or aluminum foil and bake in the preheated oven for about 2 to 2 1/2 hours, stirring occasionally, until the beans are tender and the sauce has thickened to the consistency you desire. If the sauce is too thick, add a little water and stir well.
