The size of the split chickpeas is in between the size of a lentil and a whole bean, and cook up a lot faster than whole beans. While I usually cook whole beans anywhere from 30-60 minutes depending on the variety, the split chickpeas took less than 20 minutes. The texture was good too. They maintained their shape during cooking and didn't get mushy like red lentils can. It was easy to adjust the firmness by cooking them a little more or less. I really liked using these when I wanted to taste of regular beans but didn't want to wait as long it takes for whole beans to cook. Sometimes I just mixed these split chickpeas with seasoning for simple but tasty meals. other times I blended them to use in desserts. In all cases, they worked out well. The split peas arrived in a vacuum sealed package, which I appreciated. If not so much for preserving freshness as much as ensuring that nothing contaminated the product during transport. Additionally, the package claimed that the product was grown using sustainable farming methods, which is always a bonus
