Must try smoking bone in turkey and chicken breast
Will help keep poultry moist and adds a fantastic smoky flavor and bronze colored skin that no other wood offers. Soak the chunks in water for as long as possible, but a minimum of 30 mins.

They produce smoke over a long period,often still around when I have shut the grill down waiting for it to cool. The mesquite brings back memories of when my wife and I used to meet at city grill when we worked downtown, they would use mesquite on on their meat products, brings back the memories.
