Black Truffle Salt

A truffle is the fruiting body of a fungus that grows under shallow ground, generally along the roots of various deciduous trees, and usually only in France. The mushroom is the second most expensive mushroom in the world, with the first being the white truffle. Truffles, being rather difficult to farm, garner a high price since the best are usually foraged from the wild. The aroma of the truffle is hypnotic: earthy, musky, rich, and very sweet with complex savory notes.

When steeped in salt the salt absorbs the aroma and allows for easy dispersal over food. Use this salt on potatoes, pasta, or other starchy dishes. For a gourmet treat, toss popcorn with melted butter and top with truffle salt.
