The Ethiopian Sidamo is a single origin, medium roasted bean with a full bodied earthy smoothness, and subtle floral kiss. Selectively handpicked by farmers and their families, this Sidamo bean is washed, pulped and fermented for 24 hours before being graded in washing channels and soaked in spring water to remove all traces of fermented mucilage and dried under shade on raised beds of parchment for 10-14 days. The care taken to prepare the Ethiopian Sidamo bean represents the love of the land and its people, and results in an exquisite cup profile. Sidamo - Designation of Origin

The Sidamo region of Southern Ethiopia holds the distinction as one of the three trademarked coffee regions of Ethiopia, alongside Harrar and Yirgacheffe. Sidamo is named after the indigenous ethnic group, the Sidama, and the region lies in the path of the Great Rift Valley leading to lush lands for agriculture.

Due to an abundance of resources in the area, the farmers capitalize on the land by intercropping coffee with other sustainable crops to maximize land use and to provide food for their families. Since farming methods are mostly traditional, most farms are organic by default. The exceptional quality of Ethiopian Coffee is due to the genetic flavor diversity within the farms and processing methods resulting in a coffee that is entirely cultivated, harvested and dried using mostly manual systems.
