Instructions

In a glass bowl add full contents with 2 cups of filtered (optional) hot water (not boiling). After water is added to the dry mix, stir gently. Gently knead dough with all purpose flour to form a soft ball (DO NOT OVER KNEAD). Cover in a bowl and let proof at room temperature (78 degrees) until doubled in size. Roll out dough that has been proofed on a floured surface to a quarter thickness or 1/4 inch. Cut into 3-4 inch squares. Fry immediately in cottonseed or canola oil in a deep fryer at 370F. When beignet rises, baste top of each beignet with oil during frying to cause a pillow before flipping. Beignets should be a light brown color. Drain on a paper towel before serving warm with powdered sugar , honey or sauce of your choice.
