I love this stuff.

I used Patak's simmer sauce jars for years, until I recently wasn't able to get a hold of any. So I had to get creative and look for alternatives. Glad I did. Never going back to Indian Ragu. I use about half this bottle whenever I make vindaloo but it's still cheaper than Patak and way better. All you have to do is fry your onions and your green peppers for about 10 minutes, add your cubed chicken and fry that until it's no longer raw on the outside. Clear a little space in the middle of the pan and dump some of this powder in to the oil and fry that for a little bit, like under a minute. Turn off the heat. Add canned tomato sauce and just enough water to get all the tomato sauce out of the can. Dump in canned diced or whole tomatoes along with the juice. Add any other vegetables you desire. I like cubed Sweet Potatoes. Just blanch them beforehand. Now, once everything has been simmering and it's safe to taste the sauce, add the following to taste: More Vindaloo Curry Powder (you want to see the seasonings in the sauce), Vinegar, Lemon Juice, chopped red peppers. You can add some yogurt or cream to thicken the sauce if you want. It should take about 20 minutes of simmering. Whenever the chicken is cooked is when its ready.
