Best bread pan you can buy!

This pan is so versatile. It can be used with the lid off for regular loaves and they are beautiful, but the sliding top allows you to control the density of the bread by volume. Very handy when using batters for gluten free loaves. A bread pan to last a lifetime, truly an investment.

Pain de mie pan

I didn't buy the exact pan, but I purchased a blue steel pan by the same company, Paderno World Cuisine Blue Steel Bread Pan, 41748-35. Mine bakes a 2lb loaf of bread. The pan is very heavy and durable. The cover slides pretty easily but be careful of the sharp edge of the cover especially if the bread sticks to the top. The cover has four small holes. The cover has scraped off the blue along the curled edge top of the pan from sliding. There are a few rust stains inside the pan and the lid, so if you scratch the blue coating with a knife it will leave a break in the surface of the blue coating. I think the blue coating is supposed to make it easy to get the loaf out of the pan, regardless, this pan needs to be well greased before baking, even the inside of the lid. I like this pan for making a pain de mie loaf of bread. I like that it's a heavy pan and the lid fits well but slides easily. When I purchased it I wish it had been sold without the blue coating. I think there is one now without the blue coating.
