How to Use

How to Maintain the Griddle

A true crepe pan at a reasonable price.

This is a serious crepe pan, similar in size %26 mass to professional pans I used while in the crepe business in France. Although I always used propane fired pans, I quickly adjusted to the electric power. Our propane fired pan is just not practical in our condo, so we passed it on to for son. This thing is massive, weighing maybe 30 pounds, mostly from the steel / cast iron(?) top. Like a professional pan, the huge mass of the top holds its heat long enough to cook a crepe quickly %26 evenly. The only minor drawback, which is totally unavoidable, is that it takes a while to get it up to temperature for the FIRST crepe. IFF you have 220V available, which virtually no home kitchen has, it would heat up much faster. If you're a pro, go that route. Before this pan, I tried a ~$50 pan that was well reviewed, but it was virtually weightless %26 only 12" wide, so the top just didn't maintain the heat well. Cheap pans like that may heat up quickly, but cook too slowly to make a crepe properly. They don't have the wattage nor mass to do crepes well %26 are more like a round griddle than a crepe pan. If you want true, French (actually Brittany style) crepes, this type of pan is for you, as long as you can lift it %26 store it and have an outlet nearby that will only be used for this pan, when in use. It's for serious crepe lovers, not those that very occasionally want a crepe. I just hope it lasts forever.
