Absolutely love this rice!

Delicious; high in antioxidants, fiber, and protein. I cook it in organic chicken stock (two cups stock to one cup rice) for 35-40 minutes (until all liquid is absorbed). Wonderful side dish or snack. I am sure it can be used in countless creative ways in other recipes, as well.
