Excellent! Best crust ever!

The Baking Shell works great! It's pricey, but I'm very glad I bought it. I make a long-rise dough (about 18 hour first rise, using a pinch of yeast) and after a much shorter second rise, followed by shaping, I slip the formed dough onto a baking stone and put the Baking Shell on. Thirty minutes later, I remove the Baking Shell and continue baking until the crust is golden-brown. My breads display a gorgeous, crunchy, crackly, singing crust and lovely interior! I bought this Baking Shell from another vendor.

I used this with the bread steel for the first time. I still need to learn to make a good batard shape with my recipe. It simply turned into a great boule instead. Nevertheless, paired with the bread steel the baking shell was easy to use, and the crust came out great.
