Good cookbook Especially for Lenten Fasting

I found this cookbook has GREAT recipes, some really easy. It's chockful of tasty recipes that don't use substitute stuff (soy-based meat and cheese products) you can only find at the health food store. Being that this cookbook is also strictly Mediterranean cuisine, the recipes by nature are very flavorful and healthy--an added bonus!! I am an Orthodox Christian, and during the extended fasting periods of the year, I like to have more varied meals than the usual spaghetti and marinara.
