Great meal when short on time!! Yum!!

Stouffer’s Chicken Enchiladas are awesome! After cooking them, we drizzled medium-hot salsa over them. mmmmm mmmmm Oh so good! We fed 3 adults and still had a few left over. (We bought the huge "Party Size" one). I'll tell ya, this meal would be great for Super Bowl parties and such. Only one suggestion... make more rice as the enchiladas sit on rice, but there is very little rice. Yeah, that'd be my only complaint if I had one.

Stouffer’s Chicken Enchiladas ( not to sound too much like an advertisement , but we really enjoy these ) are a great start, or complete meal for lunch, or dinner … For a family, it can be a meal, and for just the two of you, several meals… We can easily put the enchiladas in the oven and enjoy … Or, my preference is to add pinto beans 🫘 and make fresh rice 🍚 … Also, I add fiesta cheese 🧀 on top, at the last few minutes … Plus, adding salsa 💃 , chips , sour cream, and / or guacamole 🥑 is a Mexican feast and fun❣️

The easiest enchiladas I've ever made for dinner, but i have to be honest - definitely not the best. Two reasons, first, the tortillas are mushy and this is after cooking it exactly as directed. The only part that isn't mushy are the tortillas on the edge that become as crunchy as a chip. The good part is that my elderly mother in law who doesn't have her own teeth anymore doesn't have any issues eating them. Great for if you dont like food too spicy- because these are farthest from being described as "spicy"
