Great knife for breaking down a carcass

Handy sharp and comfortable to use. It is well balanced and ergonomic. This knife is extremely sharp and the grip is perfect for my size large hands. It makes quick work of venison and beef for sure. I have used it for weeks on a maple chopping block and it is still sharp.

Just what I needed

Always wanted a boning knife. I was so impressed by how much I enjoyed using it. 1st use was trimming a whole brisket and it made things a lot easier.

best fine knife

I do French Asian fusion cuisine involving very fine hand cut portions of various foods. From fish served raw in precisely cut shapes to fine dice fruit and oil sauces made to order. This knife is what I use for all my finer work.
