Super crunchy and not at all bitter as I had feared, due to experience with other quinoa-based items. The flavor is very good too - caramel cinnamon. Am delighted these are enjoyable and within my limited diet. Even for people without dietary issues/restrictions, these are an AMAZING snack or cereal - one serving has no fat, 10 grams of protein, and 10 grams of fiber. Yes, there is sugar, but less than in a sweetened yogurt. This is pretty much dietarily perfect, thus making it a unicorn among prepared foods.
