Great tasting alternative to paying a processor
An easy and cost effective way to make summer sausage with your wild game. I typically take my deer to processor. But I had a small amount of meat that would have been very expensive to take to processor. This alternative turned out to be a great path to take. Mixed into the grind with some jalapeños and slow smoked for several hours. The result was great tasting summer sausage.
